Spinach, Orange and Walnut Salad recipe

Walnuts roasted in soy sauce give thisterrific salad its crunch.

Recipe: Spinach, Orange andWalnut Salad

12 ounces spinach, washed, trimmed anddried (1 bunch)
2 navel oranges
1/3 cup walnuts, coarsely chopped
2 tablespoons soy sauce
1/4 cup cider vinegar
1/4 cup olive oil
1 tablespoon honey
1 teaspoon poppy seeds
1/4 teaspoon salt
1/4 teaspoon black pepper

  • Mix soy sauce and walnuts and roast for15 minutes at 350°F (175°C) or until golden.
  • Peel oranges and slice crosswise in 1/4inch slices, and then cut in fourths.
  • Mix spinach greens, torn into smallerpieces, oranges and walnuts.
  • Mix salad dressing in the blender. Tossdressing and spinach mixture together and serve.
