Spinach Cheddar Quiche recipe

This tasty spinach and cheddar cheese quichemakes its own crust.

Recipe: Spinach Cheddar Quiche

1 (10-ounce) package frozen chopped spinach,thawed, squeezed of excess water
1 cup (4-ounces) shredded cheddar cheese
1/2 onion, chopped
1/2 cup chopped green bell pepper
3 large eggs
3/4 cup all-purpose baking mix
1/2 teaspoon salt
1/4 teaspoon ground black pepper

  • Preheat oven to 400°F (205°C).Grease a 9-inch pie pan.
  • Combine spinach, cheddar cheese, onionand green bell pepper in a mixing bowl. Turn into the preparedpie pan.
  • In a bowl combine eggs, all-purpose bakingmix, salt, and pepper; pour over the spinach mixture.
  • Bake for about 35 minutes or until centeris firm.

    Makes 6 servings.

    Whenever family or friends spend the night at our house, and we need a delicious breakfast to serve our guests the next morning, this delicious Spinach and Cheddar Quiche is often on the menu! I m wondering, if I use goat cheese, should I add another melting cheese like mozzarella? Or do you think the goat cheese ply would be fine? Can t wait to try it!
