Spicy Stuffed Turkey Rolls.

Festive, baked turkey tenderloin rollsfilled with a tasty crumb mixture of crushed cheese-flavoredcrackers, diced mild green chiles and Monterey Jack cheese, withan easy crispy coating made with the cheese-flavored crackercrumbs.

Recipe: Spicy Stuffed TurkeyRolls

1 package Honeysuckle White® TurkeyBreast Tenderloins
2 1/2 cups cheese-flavored crackers, finely crushed
1 (4-ounce) can diced mild green chilies
1/2 cup Monterey Jack cheese, shredded
1/8 teaspoon salt
1/8 teaspoon coarse ground black pepper
3 to 6 teaspoons vegetable oil
Nonstick cooking spray

  • Preheat oven to 350°F (175°C).Cut each turkey tenderloin in half horizontally to make a thinnerpiece of meat.
  • Place tenderloin between two pieces ofplastic wrap and pound with a meat tenderizer mallet to an eventhickness.
  • In a small bowl, combine 1 1/2 cups crackercrumbs, chilies and cheese. Reserve remaining cup of crumbs forlater.
  • Season each piece of turkey with saltand pepper. Spread 1/2 cup crumb mixture over each tenderloin;roll up and secure with toothpick.
  • Brush each tenderloin with vegetable oiland roll in remaining 1 cup cracker crumbs.
  • Transfer to baking sheet coated with nonstickcooking spray.
  • Bake uncovered for 45 to 50 minutes.
  • Slice and serve.

    These cabbage rolls are stuffed with a mixture of beef, pork, and venison, then baked in a tomato sauce. I remember my grandmother making these on special occasions, usually when she had a lot of hands to help her! This is time consuming but most excellent, and the rolls freeze well for later consumption.
