Spicy Peanut Noodle Salad recipe

This noodle salad goes well with Thai-StyleChops.

Recipe: Spicy Peanut NoodleSalad

10 ounces penne, ziti or other short tubularpasta
1 small cucumber, halved, seeded and thinly sliced
2 carrots, peeled and grated
4 green onions, chopped (all of the white part and some of thegreen)
1/2 cup peanut sauce
1 tablespoon ginger flavored soy sauce
2 tablespoons rice vinegar
1 tablespoon granulated sugar
Chopped fresh cilantro
Chopped roasted peanuts

  • Cook noodles according to package directions,drain and place in large bowl; let cool slightly.
  • Meanwhile, in small bowl, stir togetherpeanut sauce, soy sauce, vinegar and sugar, stirring to dissolvesugar. Add cucumber, carrots and green onions to pasta; tossdressing with noodle mixture.
  • Serve, or chill up to 4 hours. Stir againbefore serving. Garnish with cilantro and peanuts.

    Makes 6 servings.
