Spicy Hot Chocolate Cookies recipe

Try this twist on chocolate chip cookieswith a hint of spicy cayenne pepper.

Recipe: Spicy Hot ChocolateCookies

1 cup unsalted butter, softened
1 cup firmly packed brown sugar
3/4 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cayenne pepper
2 cups semisweet chocolate chips
1 cup toasted pine nuts

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine butter, brownsugar, white sugar, eggs and vanilla. Beat until smooth and light.
  • In a separate bowl, sift together flour,baking powder, baking soda and cayenne pepper. Gradually mixin to wet ingredients. Beat until just combined and smooth.
  • Fold in chocolate chips and nuts untilcombined. Scoop cookies into 2-inch balls and place on cookiesheets.
  • Bake on the lower rack of the oven untillightly golden, about 10 minutes.
  • Remove from cookie sheet while hot andcool on a wire rack.

    Makes 36 cookies.

    these are my absolute most favorite cookie i have ever baked. half the time i bake cookies i make these. recipe as is is fantastic. they come out crackly on top but fantastically soft at 9 minutes in my oven. when i make these for kids or friends that dont like a kick i do a little less cayenne and a bit more cinnamon. delicious! highly recommend. Isa, think if I made these with coconut oil in place of canola oil, and spelt flour instead of AP flour, they would be good? Or what might my adjustments have to be? Many thanks!
