Spicy Fruit and Pork Kebabs recipe

For nice change of pace, try these spicyfruit and pork kebabs.

Recipe: Spicy Fruit and PorkKebabs

1 1/2 pounds lean boneless pork2 tablespoons olive or vegetable oil2 tablespoons balsamic vinegar1 teaspoon finely shredded orange peel2 tablespoons orange juice1 garlic clove, finely minced1/4 teaspoon salt1/4 teaspoon ground cumin12 (1 1/2-inch) cubes fresh pineapple12 (1 1/2-inch) cubes cantaloupe

  • Trim fat from meat. Cut into 1 1/2-inchcubes. Place in a plastic bag and set bag into a shallow dish.
  • For marinade, combine oil, vinegar, orangepeel and juice, garlic, salt and cumin. Pour over meat in bag.
  • Marinate in the refrigerator for 2 to4 hours, turning bag once. Drain meat, reserving marinade.
  • Alternately thread meat, pineapple andcantaloupe onto 6 long metal skewers.
  • Grill kebabs on an uncovered grill directlyover medium coals for 14 to 16 minutes or until meat is slightlypink in center, turning and brushing once with marinade.

    Makes 6 servings.

    These are really tasty – I used pork instead of chicken which worked well. Marinaded the meat for around 8 hours and it really took on the flavours well. Will definitely be doing this recipe again. Easy for a crowd too. Love the new look or think we’ve missed the mark?
