Spiced Pawpaw Fruit Cake recipe

Pawpaw is an indigenous fruit to the U.S.,its taste is similar to banana. It has many nicknames, including’Kentucky banana’, ‘prairie banana’, ‘poor man’s banana’ and’banango’.

Recipe: Spiced Pawpaw FruitCake

31/2 cups all-purpose flour4 teaspoons baking powder1 teaspoon salt1/2 teaspoon baking soda2 teaspoons ground cinnamon2 teaspoons ground ginger1 teaspoon ground nutmeg1 1/3 cups vegetable shortening1 1/3 cups granulated sugar4 large eggs2 cups pawpaw puree1 cup raisins1 1/2 cups chopped nuts3 cups candied fruits

  • Sift flour with baking powder, salt, bakingsoda, and spices.
  • Cream shortening and gradually blend insugar, beat until light and fluffy.
  • Beat in eggs, one at a time.
  • Add flour mixture alternately with pawpawpuree.
  • Mix raisins, nuts, and fruit, and stirinto batter.
  • Turn into 2 greased and floured 9 x 5x 3-inch loaf pans.
  • Bake in a slow oven (300°F / 150°C)for about 2 hours. Keep a shallow pan of hot water underneathcake throughout baking time.
  • Store cooled cakes in a tightly closedcontainer.

    Makes 5 1/2 pounds of cake.
