Spiced Coffee Nut Loaf.

A moist quick bread with cinnamon and ahint of coffee; wonderful for breakfast or with afternoon tea.

Recipe: Spiced Coffee NutLoaf

2 1/4 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons TASTER’S CHOICE® 100% Pure Instant Coffee
1 tablespoon hot water
1 1/2 cups granulated sugar
1/3 cup butter, softened
1 1/2 cups sour cream
2 large eggs
1 cup chopped nuts – divided use

  • Preheat oven to 350°F (175°C).Grease a 9 x 5-inch loaf pan.
  • Combine flour, cinnamon, baking powderand salt in a medium bowl. Combine Taster’s Choice and waterin a small bowl; stir until coffee is dissolved.
  • Combine sugar and butter in a large mixingbowl. Add sour cream and eggs; beat until creamy. Gradually beatin flour mixture alternately with coffee mixture. Stir in 3/4cup nuts. Spread batter into prepared pan. Sprinkle with remainingnuts.
  • Bake for 65 to 70 minutes or until woodenpick inserted in center comes out clean. Cool in pan on wirerack for 15 minutes. Remove from pan; cool completely on wirerack.

    Makes 1 loaf (16 servings).
