Sparkling Peach Raspberry Melba recipe

For a special treat, serve in champagneor wine goblets. Garnish with fresh mint sprigs.

Recipe: Sparkling Peach RaspberryMelba

1 (11.5-ounce) can Peach KERNS® fromLIBBY’S Refrigerated All Nectar, chilled
1 sparkling water, chilled1 cup frozen raspberries, pur edand strained

  • Combine nectar and raspberry puree; dividebetween glasses. Fill each glass with ice; top with Perrier.

    To assemble the Peach Melba , allow 2 peach halves per person and sit them on each plate alongside a scoop or 2 of ice cream . Spoon the raspberry sauce over each.
