Recipe: Spaghetti with PlumTomato-Sausage Sauce
2 tablespoons extra virgin olive oil
1 small onion, chopped
1 1/2 pounds bulk sweet or spicy Italian sausage*
2 to 4 cloves garlic, finely minced
1 1/2 cups dry white wine
4 (14-ounce) cans plum (Roma) tomatoes, hand crushed, hard coresremoved
1 teaspoon kosher or sea salt
6 to 8 large fresh basil leaves, torn
1/8 teaspoon dried oregano leaves
Freshly ground black pepper to taste
1 (16-ounce) package premium spaghetti pasta
Freshly grated Parmesan cheese for accompaniment (optional)
Makes 8 servings.
