Southwestern Quiche recipe

Southwestern Quiche.

This combination of eggs, cheese, chilesand salsa will be a hit! As a dinner entr e, finish itoff with a side of refried beans and refreshing iced tea.

Recipe: Southwestern Quiche

1/2 cup chopped green or red bellpepper
1 (4-ounce) can diced green chiles
2 green onions, chopped
2 cups shredded cheddar or Monterey Jack cheese – divideduse
12 large eggs, lightly beaten
1 cup (8-ounces) sour cream
1/2 cup NESTL ® CARNATION® Evaporated Milk
1 chopped fresh cilantro, for topping
Salsa, for topping

  • Preheat oven to 350°F (175°C).Grease 13 x 9-inch baking dish.
  • Sprinkle bell pepper, chiles and greenonions onto bottom of baking dish. Top with 1 1/2-cups cheese.
  • Whisk eggs, sour cream and evaporatedmilk in a medium bowl. Pour over vegetables and cheese in bakingdish. Sprinkle with cheese.
  • Bake for 35 to 45 minutes or until knifeinserted near center comes out clean. Cool on wire rack for 5minutes. Top with topping; season with salt.

    Makes 12 servings.
