Southwestern Egg White Quesadilla recipe

Southwestern Egg White Quesadilla.

A healthy take on southwestern fare, thissimple quesadilla brings together the earthy flavors of blackbeans and cumin combined with fluffy, scrambled egg whites, freshgrape tomatoes and piquant Monterey jack cheese.

Recipe: Southwestern EggWhite Quesadilla

1 cup (8 ounces) AllWhites, 100 percentliquid egg whites
1/2 cup black beans, drained, rinsed
1/3 cup grape tomatoes, quartered
1/4 teaspoon ground cumin
2 (7 or 8-inch) whole-wheat tortillas, cut in half
1/4 cup (1 ounce) Pepper Jack cheese, shredded

  • Spray 10-inch nonstick skillet with nonstickcooking spray. Heat over medium heat. Add AllWhites. As eggsstart to set, use spatula to lift edge, letting uncooked eggsflow to bottom of skillet. Cook until AllWhites are set but stillmoist. Stir in black beans. Cook one to two minutes or untilbeans are heated through. Sprinkle on tomatoes and cumin onceeggs are cooked.
  • Spray one side of each tortilla half withnonstick cooking spray. Place tortilla on cookie sheet, sprayedside down. Spoon about 1/2 cup AllWhites mixture on one sideof each tortilla. Top each with 1 tablespoon cheese. Fold otherhalf tortilla over mixture, pressing lightly to create quesadillasandwich (quesadillas will be full).
  • Heat broiler on HIGH. Broil two minutes,with quesadillas four to six inches from heat, or until topsare lightly browned. Carefully turn quesadillas over. Continueto broil one to two minutes or until other side is light goldenbrown.
