Recipe: Southern Sweet PotatoPudding
6 cups grated sweet potatoes (about 3medium)2 1/2 cups milk3 large eggs, slightly beaten1 cup light brown sugar, firmly packed2 teaspoons ground cinnamon2 teaspoons vanilla extract1/2 cup lightly toasted chopped almonds1 teaspoon grated orange peel2 tablespoons softened butter
Makes 12 servings.
Note: If desired, spoon about 1/3 cup bourbonover pudding just before serving, or top with 2/3 cup miniaturemarshmallows and bake 5 minutes longer to melt marshmallows.
