Sour Cream Banana Cake recipe

A moist and tender banana layer cake witha fluffy sour cream frosting.

Recipe: Sour Cream BananaCake

3 1/2 cups all-purpose flour1 teaspoon baking soda1/4 teaspoon salt2 cups packed brown sugar1 cup butter4 large eggs4 large or 5 small bananas, mashed1 cup sour cream2 teaspoons vanilla extract1 cup chopped walnuts1/2 cup butter4 cups powdered sugar1/4 cup sour cream1 teaspoon vanilla extract

  • Preheat oven to 350°F (175°C).Grease and flour three 9-inch round cake pans or a 13 x 9 x 2-inchbaking pan. Set aside.
  • In medium bowl combine flour, baking sodaand salt. Set aside
  • In large mixing bowl, cream brown sugarand 1 cup butter, add eggs one at a time; beating well aftereach addition. Add bananas, flour mixture, 1 cup sour cream andvanilla. Stir in nuts.
  • Pour batter into prepared pan(s). For9-inch pans, bake for 30 to 40 minutes; for 13 x 9 x 2-inch panbake for 40 to 50 minutes or until cake(s) test done when woodenpick inserted in center comes out clean.
  • For cake baked in 9-inch pans, cool for10 to 15 minutes on wire rack before removing from pans. Coolcompletely before frosting.

    To Make Frosting: Mix1/2 cup of butter , 4 cups powdered sugar and 1/4 cup sour cream(more if needed). Add 1 teaspoon vanilla extract and beat untilfluffy and of spreading consistency.

    Makes 12 servings.
