Cake-like cookies strewn with chopped applesand almonds and topped with a sweet apple cider glaze.
Recipe: Soft Apple CiderCookies
1 cup firmly packed light brown sugar
In a large bowl with electric mixer atmedium speed, beat brown sugar and butter until creamy. Add 1/2cup cider and eggs; beat until smooth. Reduce to low speed, graduallyblend in flour, cinnamon, baking soda and salt. Stir in dicedapples and chopped almonds.
Drop dough by tablespoonfuls, 2-inchesapart, onto greased cookie sheets.
Bake in a 375°F (190°C) oven for10 to 12 minutes or until golden brown.
To make Cider Glaze: In small bowl combinepowdered sugar and 2 tablespoons apple cider until smooth. Removecookies onto wire racks to cool. Drizzle with Cider Glaze whilestill warm.

2 1/4 cups all-purpose flour

2 apples, peeled, diced
3/4 cup finely chopped almonds
1 cup sifted powdered sugar
2 tablespoons apple cider
Makes 48 cookies.
