Soft and chewy…for some, this is theonly way a peanut butter cookie should be made and served.
Recipe: Soft and Chewy PeanutButter Cookies
2 cups all-purpose flour 1/2 teaspoon baking soda 1/4 teaspoon salt 1 1/4 cups firmly packed brown sugar 1 1/4 cups granulated sugar 1 cup butter or margarine, softened 3 large eggs 1 cup creamy peanut butter 2 teaspoons vanilla extract
Preheat oven to 300°F (150°C).
In a medium bowl, whisk together the flour,soda, and salt; set aside.
In a large mixing bowl, cream sugars andbutter with an electric mixer at medium speed until light andfluffy. Add eggs, peanut butter and vanilla and mix at mediumspeed until well blended. Stir in the flour mixture and untiljust mixed.
Drop by rounded tablespoonfuls onto anungreased cookie sheet. With a wet fork gently press cookiesin a crisscross pattern.
Bake for 18 to 22 minutes or until slightlybrown along edges.
Transfer cookies to wire rack to coolcompletely. Store in covered container.
Makes 3 1/2 dozen.
