Simple Sesame Cookies recipe

Simple, thin and crisp sesame cookies withalmonds and coconut.

Recipe: Simple Sesame Cookies

2 cups butter, softened1 1/2 cups granulated sugar3 cups all-purpose flour1 cup white sesame seeds2 cups sweetened shredded coconut1/2 cup finely chopped almonds*

  • In a large bowl, cream butter with electricmixer. Gradually add sugar and beat until light and fluffy. Stir in flour until just combined.Stir in sesame seeds, coconut and almonds.
  • Divide dough into thirds. Place one thirdof dough on a long sheet of waxed paper or plasticwrap. Shape into a roll 2-inches in diameter. Repeat with remainingdough. Refrigerate for at least 2 hours.
  • Preheat oven to 300°F (150°C).
  • Cut dough into 1/4-inch thick slices.Place about 2-inches apart on ungreased baking sheets.
  • Bake for 12 to 14 minutes. Transfer towire racks to cool. Store in airtight container.

    Makes about 4 dozen cookies.

    *Use a food processor or blender to finelychop almonds, almost ground, but not quite.

    because i do not have food processor, thus i mix all the ingredient by hand. i think you are right, the butter might not mixed evenly in the dough. maybe i melted the butter before mix into the dry ingredients, what do you think? i do not dare to cut it thicker as after baked the cookies will become bigger. i have never had these sesame cookies and i didn t even know they are more popular than chocolate chip cookies in japan but i am excited to have bookmarked your cookie recipe to try soon ??
