Shrimp and Mango with Snow Peas recipe

Sweet, savory and spicy Asian shrimp andmango stir-fry with snow peas.

Recipe: Shrimp and Mangowith Snow Peas

Peanut oil for stir-frying1 1/2 pounds large shrimp, peeled anddeveined2 red onions, sliced1 tablespoon julienned gingerroot1 1/2 tablespoons sambal (chili paste)*2 ripe mangoes, dicedJuice of 2 limes8 ounces snow peas1 tablespoon Dijon-style mustard1/8 cup rice wine vinegar1/4 cup canola oilSalt and freshly ground black pepper totasteCooked long grain rice

  • Heat a wok, then add oil and swirl tocoat. Add onions and ginger and stir-fryuntil slightly softened. Add sambal and shrimp, and stir-fryuntil shrimp are opaque. Deglaze withlime juice and add mangoes and snowpeas, heat to boil and remove from heat. Adjust seasoning.
  • In a mixing bowl, whisk together Dijonmustard, vinegar, and oil. Adjust seasoning.Toss with shrimp mixture. Serve stir-fryon bed of cooked rice.

    Makes 4 servings.

    *Canbe found in the Asian specialty aisle of most grocery stores.
