Sherry’s Bars recipe

Sherry’s cookie bars have a chewy chocolatebrownie crust spread with a buttery cream filling and toppedwith a semisweet chocolate glaze.

Recipe: Sherry’s Bars

4 (1-ounce each) squares unsweetened bakingchocolate
1 cup butter or margarine
4 large eggs
2 cups granulated sugar
1 cup all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup butter
4 cups powdered sugar
1/4 cup half and half
4 tablespoons butter
2 cups semisweet chocolate chips
3 tablespoons half-and-half
4 tablespoons butter

  • Preheat oven to 350°F (175°C).
  • Melt together baking chocolate and butter.Add eggs, sugar, flour, salt, and vanilla. Spread the mixturein a 10 x 15-inch jellyroll pan and bake for 20 minutes. Do notoverbake. Refrigerate until cool.
  • Meanwhile, cream together 1/2 cup butterand powdered sugar. Slowly add 1/4 cup half-and-half and 4 tablespoonsbutter. Beat until light and fluffy. Spread over the cooked chocolatebase.
  • Melt together chocolate chips, 3 tablespoonshalf-and-half, and 4 tablespoons butter. Mix well, then coolto room temperature. Spread over thefilling and refrigerate until set.
  • Cut into squares with a sharp knife.

    Makes 24 bars.
