Shaker Cheddar Bread recipe

Practically a cheese sandwich with thecheese built right in, this bread is great teamed with heartysoups or stews.

Recipe: Shaker Cheddar Bread

1 1/2 cups whole wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 large eggs, well beaten
1/3 cup applesauce
1 cup milk
1 1/2 cups firmly packed grated sharp cheddar cheese
1 teaspoon dried dill, optional

  • Preheat the oven to 350°F (175°C).
  • Combine the flours, baking powder, andsalt in a large mixing bowl.
  • In another bowl, combine the beaten eggswith the applesauce and milk. Whisk together until well blended.Add the wet mixture to the dry and stir vigorously until completelymixed. Stir in the cheese and optional dill.
  • Pour the mixture into an oiled, 9 x 5x 3-inch loaf pan.
  • Bake for about 50 minutes, or until thetop is nicely browned and a knife inserted into the center testsclean. Remove from the pan after 10 to 15 minutes and allow tocool completely on a wire rack.

    Makes 1 loaf.
