Delicate sesame pecan wafer cut-outs, decorativelydrizzled with chocolate.
Recipe: Sesame Pecan Wafers
1 cup butter, softened2/3 cup granulated sugar1 teaspoon vanilla extract1 3/4 cup all-purpose flour1/2 cup sesame seeds1/2 cup ground pecans or almonds2 ounces semisweet chocolate1/2 teaspoon vegetable shortening
In a large mixing bowl, beat butter withan electric mixer on medium to high speed for 30 seconds. Addthe sugar and vanilla; beat until fluffy.
Stir in the flour, sesame seeds and groundnuts.
Divide dough in half. If dough is toosticky to handle, wrap each half in waxed paper or plastic wrapand chill about 1 hour or until easy to handle.
On a lightly floured surface, roll eachhalf of the dough to 1/8-inch thickness. Using 2-inch cookiecutter, cut dough into desired shapes. Place cookies about 1-inchapart on an ungreased cookie sheet.
Bake in a 375°F (190°C) oven for7 to 8 minutes or until edges are lightly browned. Transfer cookiesto a wire rack to cool.
In a heavy small saucepan, combine thesemisweet chocolate and shortening. Heat over low heat untilmelted, stirring occasionally.
Drizzle chocolate mixture over cookiesin a decorative manner. Let cookies stand until chocolate isset.
Makes about 4 1/2 dozen.
