Sesame Pecan Wafers recipe

Delicate sesame pecan wafer cut-outs, decorativelydrizzled with chocolate.

Recipe: Sesame Pecan Wafers

1 cup butter, softened2/3 cup granulated sugar1 teaspoon vanilla extract1 3/4 cup all-purpose flour1/2 cup sesame seeds1/2 cup ground pecans or almonds2 ounces semisweet chocolate1/2 teaspoon vegetable shortening

  • In a large mixing bowl, beat butter withan electric mixer on medium to high speed for 30 seconds. Addthe sugar and vanilla; beat until fluffy.
  • Stir in the flour, sesame seeds and groundnuts.
  • Divide dough in half. If dough is toosticky to handle, wrap each half in waxed paper or plastic wrapand chill about 1 hour or until easy to handle.
  • On a lightly floured surface, roll eachhalf of the dough to 1/8-inch thickness. Using 2-inch cookiecutter, cut dough into desired shapes. Place cookies about 1-inchapart on an ungreased cookie sheet.
  • Bake in a 375°F (190°C) oven for7 to 8 minutes or until edges are lightly browned. Transfer cookiesto a wire rack to cool.
  • In a heavy small saucepan, combine thesemisweet chocolate and shortening. Heat over low heat untilmelted, stirring occasionally.
  • Drizzle chocolate mixture over cookiesin a decorative manner. Let cookies stand until chocolate isset.

    Makes about 4 1/2 dozen.

    Some recipes don t call for toasted sesame seeds, but I think you re missing out by skipping this simple step. To toast the seeds, just brown them on the stove top in a dry pan, stirring them occasionally to prevent scorching. It should only take a few minutes. And man alive, is it worth every second. Don t skip that step. Trust me. Wei-Wei, I checked your blog and you admitted that your oven doesn t work properly and the bottom heating unit doesn t heat. That s most likely why this recipe didn t work for you. It has nothing to do with this recipe so why bash it? This is a great recipe and the cookies are delicious!
