Seafood Kebabs recipe

Lime and olive oil-marinated scallops,shrimp, artichoke hearts and red and yellow bell peppers arethreaded onto skewers and grilled, brushed with the lime marinade.

Recipe: Seafood Kebabs

2 dozen large sea scallops1 dozen medium shrimp, shelled and de-veined1 (8 1/2-ounce) can whole small artichokehearts, drained2 red or yellow bell peppers, cut into2-inch pieces1/4 cup olive or vegetable oil1/4 cup fresh lime juiceSalt and freshly ground pepper to tasteWooden skewers soaked for 15 minutes inwater

  • In a large bowl, combine all ingredientsand toss gently.
  • Thread scallops, shrimp, artichoke heartsand peppers alternately on skewers; reserve marinade.
  • Preheat barbecue or gas grill. Oil grillingrack, and adjust height to about 6 inches from heat.
  • Grill kebabs over low heat 6 to 8 minutesor until scallops turn opaque and shrimp turn pink. Turn kebabscarefully at least twice during grilling and brush with marinade.

    Makes 6 servings.
