Scott’s Pumpkin Fruit Cake recipe

One man’s junk is another man’s treasure;and this includes the likes of fruitcake. For those of you whodo like fruitcake, give Scott Hansen’s unusual version a try.

Recipe: Scott’s Pumpkin FruitCake

1 cup cooked mashed pumpkin
1 cup granulated sugar
2 large eggs
2 cups mixed dried fruit
1 (11-ounce) package pie crust mix

  • Preheat oven to 180°F (85°C).Lightly grease an 8-inch round or square cake pan.
  • Combine all ingredients until well mixed;press into prepared cake pan.
  • Bake for 90 minutes or until wooden pickinserted into center of cake comes our clean.
  • Cool thoroughly before removing from pan.

    Makes 16 servings.
