Savory Holiday Cherry Sauce.

Serve this festive holiday cherry saucewith beef, pork, poultry or lamb.

Recipe: Savory Holiday CherrySauce

2 tablespoons butter3 tablespoons minced shallots21/2 cups canned sweet cherries, drained1 cup Mirassou Winery’s Central CoastPinot Noir1 cup chicken stock or low sodium broth1 cinnamon stick1 teaspoon tarragon1 tablespoon cornstarch dissolved in 1tablespoon water

  • Melt butter in a medium saucepan. Addshallots and cook until golden brown, about 5 minutes. Stir inthe cherries, wine, broth and cinnamon stick. Cook for 15 minutesover medium heat, then remove the cinnamon stick. Let cool slightly,then puree in a blender or food processor.
  • Return to the pan and add the tarragonand cornstarch. Cook over medium-low heat for 10 to 15 minutesor until thickened and reduced to about 1 3/4 cups, stirringfrequently.

    Makes 8 servings.
