Savory Cheese and Tomato Salad recipe

This is a must try salad. Serve with freshrolls and butter.

Recipe: Savory Cheese andTomato Salad

1 (12-ounce) package frozen spinach souffl
1 (8-ounce) package cream cheese, softened
2 (3 1/2-ounce) package logs goat cheese
1 teaspoon coarsely ground pepper
1/4 teaspoon salt
1 large egg
1/4 cup water
1/2 cup Italian-seasoned breadcrumbs
1 vegetable oil
8 cups mixed salad greens
1 cup oil-and-vinegar dressing
2 large tomatoes, thinly sliced

  • Thaw spinach souffle in microwave at MEDIUM(50% power) 6 to 7 minutes.
  • Stir together spinach souffle and next4 ingredients until well blended. Shape mixture into 16 patties.Chill 8 hours.
  • Pour oil to a depth of 1/2 inch into alarge heavy skillet. Fry patties, a few at a time, in hot oilover medium-high heat 2 to 3 minutes on each side or just untilgolden brown. Drain on paper towels.
  • Toss salad greens with dressing. Placein individual salad plates; top with tomato slices and cheesepatties.
