1 pound pork breakfast sausage
1 cup onion, chopped
8 cups seven-grain bread or other whole grain bread, cut into1-inch cubes
1 1/2 cups (6 ounces) Wisconsin Colby Cheese, shredded – divideduse
4 large eggs, slightly beaten
3 1/4 cups milk
2 tablespoons fresh sage, chopped, or 1 teaspoon dried sage leaves,crushed
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground
