Savory Blueberry Sauce recipe

Blueberries served with meat isn’t a newidea. Native Americans had been enjoying ham and turkey withberries long before the Mayflower came to America.

Recipe: Savory BlueberrySauce

3/4 cup chicken* broth – divided use
1/4 cup balsamic vinegar
1/4 cup orange juice
1 teaspoon honey
1 tablespoon cornstarch
1 cup fresh blueberries
2 teaspoons chopped fresh chives

  • Pour 1/2 cup chicken broth, vinegar, orangejuice, and honey into a saucepan. Bring to a boil over high heat,then reduce heat to medium.
  • Dissolve cornstarch in remaining 1/4 cupof chicken broth, and stir into the simmering sauce. Cook andstir until the sauce thickens and turns clear, 1 to 2 minutes.
  • Stir in the blueberries and chives. Servewarm.

    Makes 4 servings.

    *Vegetable broth can be substituted, ifdesired.

    I am trying this tomorrow! I have 2 lbs of blueberries that I need to use in addition to a pork tenderloin. We love blueberries and we love pork! Thank you! Is this constructive criticism? My guests had no such thing as a “blue mouth”. Sorry you were disappointed with my recipe. When we have guests in our home, I assure you that their comfort and happiness is the point of the occasion.
