Recipe: Sauteed Corn withBacon

1 tablespoon vegetable oil1 1/2 cups frozen corn kernels, cookedaccording to package2 green onions, finely chopped2 bacon slices, cooked and crumbled1/4 teaspoon Tabasco brand hot sauce

  • In a non-stick skillet heat the oil overmedium-high heat until it is hot; sautthe corn and green onions, stirring, for 1 minute. Stir in thebacon and Tabasco sauce; sautmixture for 15 seconds. Serve immediately.

    Serves 2.

    This is as simple as caramelizing some shallots in rendered bacon fat and then sauteing the corn in it. Hitting the hot pan with a bit of apple cider vinegar at the end creates a warm vinaigrette that coats each kernel of corn with the smoky flavor of the bacon and provides just enough acidity to keep it from getting too heavy. A little nutmeg and basil added at the end broadens the palette keeping this warm salad interesting to the last bite. what did you think you were to do with them, really?
