Sauteed Cabbage with Bacon recipe

Thinly sliced cabbage is browned in bacondrippings, simmered in a mixture of cider vinegar, water andsugar until crisp tender and tossed with crisp, crumbled bacon.

Recipe: Sauteed Cabbage withBacon

6 bacon slices, chopped6 cups thinly sliced cabbage (1 smallhead)Salt and freshly ground black pepper totaste2 tablespoons water2 tablespoon cider vinegar1 teaspoon granulated sugar

  • In a large skillet cook bacon over mediumheat, stirring, until crisp and transfer with aslotted spatula to paper towels to drain. Drain all but 2 tablespoonsbacon drippings.
  • In skillet cook cabbage, stirring occasionally,until golden. Add water, vinegar, sugar, saltand pepper. Cook cabbage until crisp-tender.
  • Remove from heat and sprinkle bacon over cabbage. Toss to combine and transferto a serving dish.

    Serves 4 to 6.
