A delicious thin and crispy spiced refrigeratorcookie.
Recipe: Santa Claus Cookies- St.Nikolaas Koekjes of Holland
4 cups all-purpose flour4 teaspoons ground cinnamon1/2 teaspoon ground nutmeg1/2 teaspoon ground cloves1/2 teaspoon baking soda1/2 cup sour cream1 cup soft butter1 cup vegetable shortening2 cups granulated sugar1/2 cup finely chopped nuts
In medium bowl, combine flour, spices,mixing well; set aside. Dissolve baking soda in sour cream; setaside.
In large mixing bowl, cream butter andshortening with sugar until light and fluffy. Add flour mixtureto creamed mixture alternately with sour cream . Stir in nuts.Knead. Shape into roll about 2 1/2-inches in diameter. Wrap inwaxed paper or plastic wrap and chill for 8 hours.
Preheat oven to 375°F (190°C).Cut into 1/4-inch slices and bake on non-stick baking sheet for10 to 15 minutes. Transfer to wire racks to cool. Store in tightlysealed container.
Makes 4 dozen cookies.
