Salted Peanut Cookies recipe

Sweet and salty, double the peanut flavorcookies.

Recipe: Salted Peanut Cookies

1/2 cup creamy peanut butter
1 cup vegetable shortening
1 cup packed brown sugar
1 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
2 cups all-purpose flour
1 cup quick-cooking oats
1 cup peanuts

  • Preheat oven to 375°F (190°C).
  • In a large bowl, blend together peanutbutter, shortening, brown sugar, and sugar until creamy. Addeggs and beat until fluffy. Stir in vanilla. Set aside.
  • In another bowl, sift together bakingpowder, baking soda, and flour. Stir flour mixture into the creamedmixture. Add oats and peanuts, mix until combined.
  • Drop dough by rounded teaspoon onto ungreasedcookie sheets.
  • Bake for 10 minutes, or until lightlybrowned. Cool on cookie sheets for 2 minutes. Transfer to wireracks to cool completely.

    Makes 48 cookies.
