Sweet and salty, double the peanut flavorcookies.
Recipe: Salted Peanut Cookies
1/2 cup creamy peanut butter
Preheat oven to 375°F (190°C).
In a large bowl, blend together peanutbutter, shortening, brown sugar, and sugar until creamy. Addeggs and beat until fluffy. Stir in vanilla. Set aside.
In another bowl, sift together bakingpowder, baking soda, and flour. Stir flour mixture into the creamedmixture. Add oats and peanuts, mix until combined.
Drop dough by rounded teaspoon onto ungreasedcookie sheets.
Bake for 10 minutes, or until lightlybrowned. Cool on cookie sheets for 2 minutes. Transfer to wireracks to cool completely.
1 cup vegetable shortening
1 cup packed brown sugar
1 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
2 cups all-purpose flour
1 cup quick-cooking oats
1 cup peanuts
Makes 48 cookies.
