Salmon Fiesta Tacos recipe

Nutrient-rich salmon is combined with salsa,mild green chiles and black beans and served in corn tortillaswith a variety of topping choices.

Recipe: Salmon Fiesta Tacos

1 (14 3/4-ounce) can salmon, or 2 (7 1/2-ounce)cans
1 1/2 cups thick and chunky salsa
1 (4-ounce) can diced green chiles, drained
1 (8 3/4-ounce) can black beans, rinsed and drained
1 dozen corn taco tortillas (warmed or fried)Suggested Toppings:Cabbage or lettuce, shreddedGreen onion, choppedTomatoes, choppedMonterey Jack or cheddar cheese, shreddedBlack olives, slicedAvocado, seeded, peeled and dicedFresh cilantro leaves, choppedSour creamLime wedges

  • Drain and flake salmon, removing skinand bones if necessary. Set aside.
  • Combine salsa, green chiles and beansin a large saucepan; stir and heat through. Add the salmon; stirgently and heat through again. Transfer salmon mixture to a servingdish.
  • To serve, allow each person to build theirown taco by spooning salmon mixture into prepared tortilla shelland topping with desired condiments.

    Makes 4 to 6 servings.
