S’more Cheesecake recipe

This luscious cheesecake is just as yummyand delightful as the campfire treat that inspired it!

Recipe: S’more Cheesecake

Crust:2 1/4 cups graham cracker crumbs (about36 squares)1/3 cup granulated sugar1/2 cup butter, meltedFilling:2 (8-ounce) packages cream cheese, softened1 (14-ounce) can sweetened condensed milk2 teaspoons vanilla extract3 large eggs1 cup miniature semisweet chocolate chips1 cup miniature marshmallowsTopping:1 cup miniature marshmallow1/2 cup semisweet chocolate chips1 tablespoon vegetable shortening

  • In a small bowl, combine cracker crumbsand sugar; stir in the butter. Press onto the bottom and 1 3/4-inchesup the sides of a greased 10-inch springform pan; set aside.
  • In a mixing bowl, beat the cream cheese,milk and vanilla until smooth. Add eggs; beat on low just untilcombined. Stir in chocolate chips and marshmallows. Pour overcrust. Bake at 325°F (160°C) for 40 to 45 minutes oruntil center is almost set. Sprinkle with marshmallow. Bake 4to 6 minutes longer or until marshmallows are puffed.
  • Meanwhile, melt chocolate chips and shortening;stir until smooth. Drizzle over marshmallows. Cool on a wirerack for 10 minutes. Carefully run a knife around edge of panto loosen; cool 1 hour longer. Refrigerate overnight and removesides of pan.

    Makes 12 servings.

    Hi Angie! It really depends on what you desire. Are you looking for a large cheesecake to feed a large group? If so, you can double the recipe. Although, if you are looking for a result that is more of cheesecake bars, leave the recipe as is and you will get thin cheesecake bars instead. Thank you Do you have any problems with the batter being over mixed? That always seems to be my problem when making a cheesecake. Then the silly thing cracks right down the middle!
