Ruby Red Grapefruit Cake recipe

A ‘cake-mix-easy’, fix-it-up and call ithomemade ruby red grapefruit Bundt cake.

Recipe: Ruby Red GrapefruitCake

1 (18.25-ounce) package white oryellow cake mix
1 cup ruby red grapefruit juice, fresh squeezed or fromthe carton
1/2 cup vegetable oil
4 large eggs
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/8 teaspoon red food coloring
1/4 cup powdered sugar

  • Preheat oven to 350°F (175°C).
  • Combine cake mix, grapefruit juice, oil,eggs and vanilla in a large mixing bowl. Beat with electric mixeron low speed for 1 minute until blended; beat 2 more minutesat medium-high speed. Beat in red food coloring until well blended.
  • Pour into greased and floured 12-cup Bundtpan.
  • Bake 45 to 50 minutes or until woodenpick inserted into center comes out clean. Cool in the pan ona wire rack 20 minutes; invert onto wire rack and cool for additional30 minutes.
  • Dust with powdered sugar before serving.

    Makes 12 servings.

    I have now made this twice in the past week. Once using Greek yogurt rather than sour cream and it is fabulous! The only thing I have noticed is it takes at least 30 minutes more than the recipe says to bake it, but I know each oven is different. It is definitely worth the wait. You really come up with the most creative und beautiful looking desserts and meals. The next time I get my hand on some juicy grapefruit I ll be making this! Why only have grapefruit for breakfast when you can have it in cake?!
