Roquefort Buttermilk Dressing recipe

Roquefort, sometimes called the ‘king ofcheeses’, reigns deliciously in this creamy salad dressing.

Recipe: Roquefort ButtermilkDressing

1/4 cup plus 2 tablespoons crumbled Roquefortor other blue cheese1 cup buttermilk1 1/2 teaspoons Worcestershire sauce1 tablespoon white wine vinegar1 tablespoon Dijon mustardSalt and freshly ground black pepper totaste

  • In a blender combine 1/4 cup Roquefortcheese and the remaining ingredientsand blend until smooth.
  • Pour into bowl and stir in remaining2 tablespoons Roquefort cheese, season withsalt and pepper.
  • Cover and keep refrigerated for up to1 week.

    Makes about 1 1/2 cups.
