Rocky Road Cheesecake recipe

Creamy, no-bake chocolate cheesecake, strewnwith miniature marshmallows and nuts, in a chocolate wafer crumbcrust.

Recipe: Rocky Road Cheesecake

1 cup chocolate wafer crumbs
3 tablespoons butter or margarine, melted
1 (1/4-ounce) envelope unflavored gelatin
1/4 cup cold water
2 (8-ounce) packages cream cheese, softened
3/4 cup granulated sugar
1/3 cup unsweetened baking cocoa
1/2 teaspoon vanilla extract
1 cup heavy cream, whipped1 cup miniature marshmallows
1/2 cup chopped nuts

  • Combine chocolate wafer crumbs and meltedbutter; press onto the bottom of a 9-inch springform pan. Bakeat 350°F (175°C) for 10 minutes. Set aside.
  • Soften unflavored gelatin in cold water;stir over low heat until dissolved. Combine softened cream cheese,sugar, unsweetened baking cocoa, and vanilla; mix at medium speedwith an electric mixer until well blended. Gradually add thegelatin mixture; blend well.
  • Whip cream to soft peaks and fold intothe cream cheese mixture along with the miniature marshmallowsand chopped nuts. Pour over the crust. Chill until firm.

    Makes 12 servings.

    This is hands down my best chocolate cheesecake recipe that s just been dressed up for a rocky road fix. It s creamy in body and covered in melted chocolate and topped with mini marshmallows and salted almonds it’s my favorite chocolate cheesecake to date. The cheesecake body reminds me of hot chocolate in flavor but then the marshmallows and almonds hit and its all rocky road, baby! you had me @ oreo crust! that is my all time fav crust i love baking small high cheesecakes as well… cannot wait to try my hand @ this recipe! do you ever use water baths when baking? your blog is truly elegant your photography stunning your presentation amazing! i enjoy bakersroyale so very much! thank you!
