Roasted Red Pepper Yogurt Dip.

Pureed roasted red peppers are combinedwith plain yogurt, green chiles and garlic to make a deliciousdip. Serve with assorted cut vegetables and crisp pita wedges.

Recipe: Roasted Red PepperYogurt Dip

1 (12-ounce) jar roasted red peppers,drained
2 (8-ounce each) containers lowfat plain yogurt
1 (4-ounce) can chopped green chiles, drained
1 garlic clove, mincedAssorted cut vegetables and/or pita wedgesfor accompaniment

  • Puree red peppers in food processor orblender; drain again. Add remaining ingredients; mix until blendedand refrigerate. Serve with assorted cut vegetables or pita wedges.

    Makes 5 servings.

    This sounds fantastic- I kind of love how there s not tons and tons of feta, but rather, this is almost like roasted red pepper hummus meets yogurt meets feta. I say skip the dippers, I always like the dip better anyway! Who needs dippers when you can just eat this off a spoon? I m pretty sure that s what I would do. No shame.


    Oh my gosh I am making this! I love red peppers and I have some feta cheese I need to use up!! What a great dip and yah I d be eating this by the spoonfuls too!! Beans, feta, roasted peppers and garlic all of my favorite ingredients. How could this not be as amazing as it looks? Yum!!
