Roasted Potatoes with Onion and Garlic recipe

This simple to prepare, flavorful potatoside dish is sure to please the whole family.

Recipe: Roasted Potatoeswith Onion and Garlic

6 medium russet potatoes, scrubbed, unpeeledand cut into wedges1 large onion, peeled and cut into wedgesor cubes4 cloves of garlic, halved3 tablespoons butter3 tablespoons vegetable oilKosher or sea salt to tasteFreshly ground pepper to taste

  • Preheat oven to 450°F (230°C).
  • Place butter in a 9 x 13 x 2-inch bakingpan. Set pan in oven until butter melts,remove from oven; add oil and stir to mix. Addpotatoes, onion and garlic, stirring to coat vegetableswith the butter/oil mixture.
  • Bake, stirring occasionally, until potatoesare golden brown and tender when pierced,about 30 minutes.
  • Season to taste withsalt and pepper. Serve immediately.
