Roast Turkey with Cranberry Honey Glaze.

This festive roast turkey is dressed forboth the fall and winter holidays with a its glistening coatof sweet-tart cranberry and honey glaze.

Recipe: Roast Turkey withCranberry Honey Glaze

1 cup Ocean Spray® Jellied CranberrySauce
1/4 cup honey
1 (8 to 12-pound) fresh or frozen turkey, thawed
1 Lemon

  • Start by making glaze. Combine cranberrysauce and honey in a small saucepan. Cook over medium heat justuntil sauce is smooth, whisking frequently. Set aside. Makesabout 1 cup.
  • Be sure turkey is completely thawed. Removeturkey from original wrapper and remove neck and giblets fromcavities. Rinse turkey thoroughly with cold water; drain andpat dry with paper towels. Tuck wing tips under back or tie tobody. Refasten drumsticks with metal or plastic clip or bandof skin.
  • Preheat oven to 325°F (160°C).
  • Thinly slice 1 lemon. Carefully loosenthe skin of the turkey towards the front of the breast. Usingthe handle of a wooden spoon, gently slide lemon slices underskin on both sides of turkey.
  • Place turkey breast-side up on wire rackin shallow roasting pan. Insert meat thermometer into the thickestpart of the inner thigh; do not let thermometer touch bone. Liberallybrush with cranberry honey glaze.
  • Roast turkey uncovered until skin reachesdesired brown color; cover loosely with a tent of aluminum foilfor remaining time. Continue to baste with cranberry honey glazeduring cooking. Roast until thermometer reaches 180°F (85°C),approximately 2 3/4 to 3 hours. Remove from oven; let stand 20minutes before carving.

    Makes 12 to 14 servings.


    If stuffing turkey, the stuffing shouldbe prepared and loosely packed into the turkey just before placingturkey in oven. Increase roasting time to 3 to 3 1/2 hours. Thestuffing should register 165°F on meat thermometer.

    To ensure food safety, remove stuffingimmediately after cooling; do not store in bird.

    Roast for 30 minutes and then lower the heat to 350 degrees F and continue cooking for 15-20 minutes per pound of turkey. Baste the bird every 20 minutes with the pan drippings and baste the bird with the glaze once per hour. Rotate the roasting pan once every hour to help the bird cook evenly.
