Rita’s Lemon Bars recipe

Rita’s favorite lemon cookie bar recipe…itcould become your favorite, too!

Recipe: Rita’s Lemon Bars

1/3 cup powdered sugar
1 cup butter
2 cups all purpose flour – divided use
4 large eggs
1 3/4 cups granulated sugar – divided use
1/3 cup fresh lemon juice
1/2 teaspoon baking powder

  • In a bowl beat powdered sugar and butterwith an electric mixer on medium speed for 30 seconds. Add 13/4 cups flour. Beat till thoroughly combined. Press mixtureinto a greased 13 x 9-inch baking pan. Bake at 350°F (175°C)for 20 minutes.
  • Meanwhile, combine eggs, 1 1/2 cups sugar,lemon juice, 1/4 cup flour, and baking powder. Pour over hotbaked layer. Sprinkle with 1/4 cup sugar, and return to the ovenfor 20 to 25 minutes more or till lightly browned around theedges and center is set.
  • Cool and cut into bars.

    Makes 36 bars.
