This yummy ricotta cheesecake in a cakeis ‘cake-mix-easy’.

Recipe: Ricotta Cake

1 (18.25-ounce) package yellow cake mix.2 (16-ounce) containers ricotta cheese4 large eggs1 cup granulated sugar1 teaspoon vanilla extract

  • Preheat oven to 325°F (160°C).Grease and flour a 13 x 9 x 2-inch baking pan.
  • Prepare cake mix according to packagedirections. Pour into prepared baking pan. Set aside.
  • Combine ricotta cheese, eggs, sugar andvanilla until well blended. Spoon evenly over the cake batter.
  • Bake for about 1 hour 15 minutes or untilwooden pick inserted in center comes out clean. Cool thoroughlyon wire rack. Sprinkle with powdered sugar. Store in refrigerator.

    Makes 12 to 16 servings.
