These rich chocolate truffles make a greatgift for the serious coffee lover.
Recipe: Rich Mocha Truffles
1/4 cup heavy or whipping cream
Combine heavy cream, sugar, butter andinstant coffee in a small saucepan and cook over low heat, stirringconstantly, just until mixture boils.
Remove from heat; add chocolate chipsand vanilla. Stir until chips are melted and mixture is smooth.
Pour into a small bowl and refrigerate,stirring occasionally, until mixture begins to set. Cover andrefrigerate several hours or overnight to allow flavors to marry.
Working quickly, form small amounts ofmixture into 1/2-inch balls. Roll in nuts or chocolate sprinkles.Store in refrigerator. Serve cold.
3 tablespoons granulated sugar
3 tablespoons butter
1 1/2 teaspoons powdered instant coffee
1/2 cup semisweet chocolate chips
1/2 teaspoon vanilla extract
Chopped nuts or chocolate sprinkles
Makes about 1 1/2 dozen truffles.
