Recipe: Rich Chocolate Cakewith Vanilla Glaze
Cake:1 cup (6-ounces) milk chocolate chips 1/2 cup butter, softened 1 cup boiling water 2 cups all-purpose flour 1 1/2 cups granulated sugar 1/2 cup unsweetened cocoa powder 2 teaspoons baking soda 1 teaspoon salt 2 large eggs 1/2 cup sour cream 2 teaspoons vanilla extract Vanilla Glaze:1/4 cup butter2 cups powdered sugar2 to 3 tablespoons hot water1 1/2 teaspoons vanilla extract
Heat oven to 350°F (175°C). Greaseand flour 12-cup Bundt pan.
For Cake: Place chocolate chips and butterin a medium bowl, add boiling water and stir until chocolateis melted.
In a large bowl, combine flour, sugar,cocoa, baking soda and salt; gradually add chocolate mixture,beating until thoroughly blended. Add eggs, sour cream and vanillaand blend well. Pour batter into prepared pan.
Bake for 55 to 60 minutes or until woodenpick inserted in center comes out clean. Cool 10 minutes; removefrom pan to wire rack. Cool completely.
For Vanilla Glaze: Place butter in a mediummicrowave-safe bowl. Microwave at HIGH (100%) 30 seconds or untilmelted. Stir in powdered sugar, hot water and vanilla,beating until smooth and slightly thickened. Drizzle over cooledcake.
