Really Yummy Dark Fudge with Pistachios.

A decadent dark chocolate fudge made withdelicious pistachios.

Recipe: Really Yummy DarkFudge with Pistachios

1 1/2 cups granulated sugar
2/3 cup (5 ounce can) NESTL ® CARNATION® EvaporatedMilk
2 tablespoons butter
1/4 teaspoon salt
2 cups miniature marshmallows
12 ounces NESTL ® TOLL HOUSE® CHOCOLATIER 53%Cacao Dark Chocolate Baking Bar, coarsely chopped
1/2 cup plus 2 tablespoons coarsely chopped shelled pistachiosor toasted pecans – divided use
1 teaspoon vanilla extract

  • Line 8-inch-square baking pan with foil.
  • Combine sugar, evaporated milk, butterand salt in medium, heavy-duty saucepan. Bring to a full rollingboil over medium heat, stirring constantly. Boil, stirring constantly,for 4 to 5 minutes. Remove from heat.
  • Stir in marshmallows, chocolate, 1/2 cupnuts and vanilla extract. Stir vigorously for 1 minute or untilmarshmallows are melted. Pour into prepared baking pan. Sprinkleremaining 2 tablespoons of nuts over top of fudge; carefullypress nuts into the fudge. Refrigerate for 2 hours or until firm.Lift from pan; remove foil. Cut into 48 pieces.

    I am willing to believe that a confectioner wouldn’t call this proper fudge, but it tastes divine, and you won’t need a sugar thermometer or have to test for frightening soft or hard ball stages. I like this best when it’s made slightly less express, but with no greater effort, by stashing it in the deep freeze. It goes really grainy and fudgy this way.
