Raspberry Rice Dessert recipe

Fluffy raspberry rice cream gelatin dessert.

Recipe: Raspberry Rice Dessert

1 (3-ounce) package raspberry flavoredgelatin dessert
1 cup boiling water
1/2 cup cold water
2 cups cold cooked rice
1 1/2 cups whipping cream, whipped
1/3 cup sliced almonds, toasted
1 1/2 cups fresh raspberries, divided use

  • Dissolve gelatin in boiling water in mediumbowl; add cold water. Place bowl in ice water and stir untilgelatin is the consistency of unbeaten egg whites; stir in rice.Fold in whipped cream until smooth. Lightly fold in almonds and1 cup raspberries. Continue to stir gently (over ice) until thickened.
  • Pour into dessert dishes. Chill untilready to use. Garnish with remaining 1/2 cup raspberries.

    Makes 8 servings.

    I prepared this tonight, but used a combination of rice milk and coconut milk as my husband is allergic to dairy products. It came out good, maybe a bit liquid, but everyone loved it. The raspberries give it a lovely color. Thanks for this gluten free dessert !
