Raspberry Chocolate Streusel Bars recipe

The classic crumb cookie bar with finelychopped pecans in the crust and crumb topping, and a lusciousraspberry-chocolate chip filling.

Recipe: Raspberry ChocolateStreusel Bars

2 1/2 cups all-purpose flour
1 cup granulated sugar
3/4 cup finely chopped pecans
1 large egg, beaten
1 cup cold butter or margarine
1 (12-ounce) jar seedless red raspberry jam*
1 cup white, milk or semisweet chocolate chips

  • Heat oven to 350°F (175°C). Greasea 13 x 9 x 2-inch baking pan; set aside.
  • Combine flour, sugar, pecans and egg inlarge bowl. Cut in butter with pastry blender or fork until mixtureresembles coarse crumbs; set aside 1 1/2 cups crumb mixture.
  • Press remaining crumb mixture on bottomof prepared pan.
  • Stir jam to soften; carefully spread overcrumb mixture. Sprinkle with chocolate chips. Crumble remainingcrumb mixture evenly over top.
  • Bake 40 to 45 minutes or until lightlybrowned. Cool completely in pan on wire rack; cut into bars.

    Makes 24 to 36 bars.

    For variation, try other flavors of jamlike apricot or strawberry.
