Ranger Cookies recipe

These ranger cookies are chock-full ofgood things like oats, corn flakes, coconut and nuts.

Recipe: Ranger Cookies

1 cup butter, softened
1 cup granulated sugar
1 cup brown sugar, firmly packed
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt (optional)
2 cups quick or old fashioned oats
2 cups corn flakes cereal
1/2 cup sweetened shredded coconut
1/2 cup chopped nuts

  • Heat oven to 350ºF (175ºC).In large bowl, beat margarine and sugars until creamy. Add eggsand vanilla; beat well. Add combined flour, baking soda, bakingpowder and salt; mix well. Add oats, corn flakes, coconut andnuts; mix well.
  • Drop dough by heaping tablespoonfuls ontoungreased cookie sheets.
  • Bake 10 to 12 minutes or until light goldenbrown. Cool 1 minute on cookie sheets; remove to wire rack. Coolcompletely. Store tightly covered.

    Makes 2 dozen large cookies.

    This is a fantastic recipe. Everyone loves the cookies and the recipe makes a ton of cookies. I make some without chocolate chips because I think they overpower the amazing flavor of the rest of the cookie but no one else agrees with me. I don’t think I’d like raisins in it though I am sure some people would.
