Raita recipe

Can be served with toasted pita bread triangles.

Recipe: Raita

1 cup plain low-fat yogurt
1 cucumber, peeled and thinly sliced
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon crushed red pepper flakes
1/2 teaspoon cumin seed
1/2 teaspoon coriander seed

  • In small bowl, stir together cucumber,yogurt, salt and peppers.
  • In a small heavy skillet, toast the cuminand coriander seeds over high heat until fragrant, about 1 minute.Crush seeds coarsely and stir into yogurt mixture. Cover andchill.

    Makes about 2 cups.

    Love the new look or think we’ve missed the mark? We want to hear your thoughts – good and bad – to make sure we make the new website as useful as possible. Tastes great but after “whizzing” the ingredients as per the recipe, my raita was bright green! And there is a tip below the recipe stating that salt can draw moisture and make the raita too wet. I don’t even see salt in the recipe as one of the ingredients?!!
