Rain or Shine Barbecue recipe

Rain or Shine Barbecue.

This tasty barbecue sauce, made with Russianor French dressing, apricot preserves and dry onion soup mix,goes well with both pork or chicken. The recipe includes indoor(rain) and outdoor (shine) directions for cooking spareribs andchicken.

Recipe: Rain or Shine Barbecue

1 (8-ounce) bottled red Russian or Frenchdressing
1 (12-ounce) jar apricot preserves
1 (2.4-ounce) package dry onion soup mix
3 pounds spareribs, cut into serving pieces
2 to 2 1/2 pounds chicken, cut into serving pieces

  • In medium bowl, blend dressing, preservesand onion soup mix; set aside.

    Indoor Preparation:

  • Preheat oven to 375º (190ºC).
  • In large shallow baking pan, bake spareribs30 minutes. Then, begin to bake chicken, arranged in additionallarge shallow baking pan. Brush chicken and spareribs with halfthe glaze; bake 30 minutes. Brush with remaining glaze, thenbake an additional 15 minutes or until chicken and spareribsare done.

    Outdoor Preparation:

  • Grill spareribs 30 minutes. Then, addchicken and grill 20 minutes. Brush chicken and spareribs withglaze and continue to grill, turning and basting frequently,until chicken and spareribs are done.

    Makes 8 servings.
