Chocolate chips, marshmallow and pecansmakes this a rocky-road type fudge.
Recipe: Quick Pecan Fudge
1 1/2 cups granulated sugar
Line an 8 x 8 x 2-inch pan with aluminumfoil; set aside.
Combine sugar, evaporated milk, butterand salt in a heavy-medium saucepan over medium heat. Bring toa boil; stirring constantly. Boil 4 to 5 minutes. Remove fromheat; stir in semi-sweet chocolate chips, miniature marshmallowsand vanilla. Stir vigorously until the marshmallows are melted,about 1 minute.
Pour into prepared pan. Sprinkle withchopped pecans, pressing in lightly. Refrigerate until firm.Cut into 16 pieces.
2/3 cup evaporated milk
2 tablespoons butter
1/4 teaspoon salt
1 1/2 cups semisweet chocolate chips
4 ounces miniature marshmallows
1 teaspoon vanilla extract
3/4 cup chopped pecans
Makes 16 pieces.
